I like that I can monitor the temperature on the electric skillet but everyone swears by the iron. Any thoughts?

almost anything is superior to an electic skillet.
With an electric skillet you can't 100% controll your heat, with a stove top skillet, you can take it off the heat & stop the cooking process at any time, giving you more controll over

I 've never been into kitchen gadgets or specialty appliances.
For example, I have at least three tools designed to cut corn kernels off the cob, but I decided last summer that none works as well as a simple chef's knife.
I've used the same low-tech manual can opener for years. Ditto the corkscrew. (OK, so there's an electric cork puller on my counter, but that was a Christmas gift from Grandma.)
I do have three slow cookers, but one is the same Crock-Pot my husband took with him to college.
So I've accumulated only two on my own, and only the one with a digital timer can be called marginally high-tech.
All of which is to say that I've never been what you'd call a techy kitchen geek.
Until now.
Lately, I've been trying to get the hang of cooking on an induction burner, a kitchen appliance that seems to have a certain techno-geek appeal. And while the results of my induction experiments have been mixed, I can't help but enjoy the challenge.

If you can afford the extra tool, and electric griddle is the right tool for the job. If you don’t want that, an alumiumum griddle is actually a better choice than the cast iron one. It heats more quickly and evenly, and the nonstick surface is better for pancakes. It’s easier to care for than cast iron. it can be thrown in the dishwasher rather than the seasoning and hand-washing that cast iron takes. An electric griddle. You can also use it for perfect bacon and eggs as well as french toast and grilled cheese or other toasted sandwiches. Sounds funky but you’ll never clean a pancake mix batter bowl again. It heats evenly, without the hotspots you’ll get even on the best pans when you put them over a burner....
